4 eggs
1 (15 oz.) can of pumpkin
1c. vegetable oil
2 c. flour
1 1/2 c. sugar
2 t. baking powder
1 t. baking soda
1 t. salt
2 t. cinnamon
1/2 t. nutmeg
3 oz. cream cheese
1/4 c. butter
3/4 t. vanilla extract
2 c. powdered sugar
Preheat oven to 350. Beat together the eggs, pumpkin, sugar and oil until well blended. Add the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Mix until smooth and spread in an ungreased 10x15 pan or 9x13 pan. Bake for 25-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before frosting. For the frosting: beat together the cream cheese, butter, vanilla extract and powdered sugar. Spread over the cooled cake.
