12 oven ready lasagna noodles
1 lb. lean ground beef
1 (1 oz.) pkg. Old El Paso taco seasoning
1 egg
1 (15 oz.) container ricotta cheese
4 c. (1 lb.) shredded cheddar cheese
1 (24 oz.) jar chunky salsa
Optional toppings: sour cream, green onions, chopped tomatoes
Preheat oven to 350 degrees. Brown ground beef in a skillet, drain and add taco seasoning. In a small bowl combine the egg and ricotta. In a greased 9x13 dish, layer 4 noodles, top with 1/3 of the ricotta mixture, 1/3 of the beef, 1/3 of the salsa and 1/3 of the cheese. Repeat the layers two more times. Cover with foil and bake for 30-40 minutes, or until heated through and bubbly. Remove from oven and allow to stand for 10 minutes before serving. Serve with optional toppings. **Can be made with oven ready lasagna noodles or traditional lasagna noodles. Cook traditional noodles according to package directions before assembling casserole.
