1/2 lb. bulk pork sausage
12 eggs
1/2 c. onion, chopped
1/4 c. bell pepper, chopped
1/4 t. garlic powder
1/2 t. salt
1/4 t. pepper
1/2 c. shredded cheddar cheese
Preheat oven to 350 degrees F. In a large skillet, cook sausage over medium heat until no longer pink and drain. Beat eggs in a large bowl, add onion, green pepper, and seasonings. Stir in sausage and cheese. Spoon 1/3 c. into muffin tin that has been coated with cooking spray. Bake 20-25 min. or until a knife inserted near the center comes out clean. These may be frozen. Substitute turkey sausage and low-fat cheese for a healthier option.
