During the winter we love to drink hot chocolate and eat churros. Churros can be very time-consuming to make, but with this easy and kid-friendly recipe, your whole family can make them together in no time.
You will need:
2 cups of pancake mix (you can use any brand but our favorite is Whataburger pancake mix)
2 cups water
Oil for deep frying (we use sunflower oil because it has heart-healthy unsaturated fats)
8 Tbsp. sugar (You can use your favorite sweetener. We recently discovered coconut sugar)
4 tsp. cinnamon
1 mixing bowl
Pastry bag or ziploc bag
Ladle
Saucepan
Paper towels
Flat cookie sheet
To make your churros:
In a saucepan boil two cups of water. Turn off the flame and then add the pancake mix to the water. Using a spatula mix well to form soft dough. Make sure that the dough is on the thinner side so it is easy to squeeze out. In a wide bowl combine the sugar and cinnamon. Mix well and set aside.
Prepare a pastry bag with a star nozzle. But if you don’t have a pastry bag you could use a Ziploc bag. Make a small hole at one of the bottom corners to squeeze out the dough. Line the cookie sheet with paper towels.
Heat the oil to deep fry the churros. I have my kids squeeze small long strips of the dough on the ladle and then I carefully slide it into hot oil and fry them. Fry the churros until they are golden brown and crisp. The first time I made them they appeared a little a soft when frying but then noticed the churro will harden up after they are taken out of the oil. Drain them on the paper towel-lined cookie sheet. Then transfer each churro one by one into the sugar mixture and set it aside to serve.
Churros taste great when eaten warm. My kids like to dip them in their hot chocolate mug. Me and my husband like to dip them in melted chocolate!
