2 lbs. boneless and skinless chicken breast
1 (28 oz.) can diced tomatoes, half of liquid drained
1 sweet onion, sliced thin
4 garlic cloves, minced
3 T. balsamic vinegar (plus more for serving)
1 T. Italian seasoning
6 c. fresh spinach
salt and pepper to taste
Place chicken in slow cooker and top with remaining ingredients except spinach. Cook on low for 4 hours. Add spinach the last 30 minutes of cook time.
